I recently went to a Thai restaurant and discovered that one plate of curry and rice could represent 800 calories ! I loved so much curry but I also felt really guilty after eating my plate and this is why I wanted to share with you this recipe which is very light, easy and as delicious as at the restaurant !

For 3 portions you need :

one small onion chopped

2tbsp garlic powder

2tbsp ginger powder

3 cup diced pumpkin

3 big tbsp red curry powder

1tbsp maple syrup

3,5 cup extra light coconut milk ( mine is 50cals/cup )

1,5 cup greens ( I choose brocolis and snow peas )

1 tbsp soy sauce

2tbsp lemon juice

10-20 drops Tabasco

Salt and pepper

Fresh cilantro

100g rice

Every portion contains 285 calories, 7.5g protein, 49g carbs and 5g fat.

In a pot put the onion, the garlic and the ginger. Saute them during 3minutes at high temperature.

Add the pumpkin and the curry and cook for another 2minutes

Add the coconut milk, the maple syrup and the soy sauce. Make it boil and cook for 15 minutes.

Put the rice in boiling water and cook it during 15-20 minutes.

Add the greens, the spices and the lemon juice in the curry and cook for 4 minutes

Put it in a plate add the cooked rice, the cilantro and you delicious guilty free dinner is ready 🍲

I personally love this recipe for three reasons, it’s light, quick and makes you instantly happy, even if you had one of those sad and rainy days of October . The warm balsamic, the little grilled grapes, the fennel and the spices are juste so tasty and comforting !

For two portions you need :

1/2 tbsp olive oil

Two fennels cut in big bites

Two shallots chopped

3 tbsp sage

1/2 tsp cumin

1 tsp sesame seeds

1 tsp dried Chili

Salt pepper

4tbsp balsamic vinegar

1/2tbsp olive oil

200g grappes

In each portions you will find 288 calories, 5g protein, 50g carbs, 7g fibre and 9g fat.

In a pan cook the fennels with the oil for 10minutes, add the shallots, the sage and cook for another 5 minutes and add the spices.

Put the veggies in a bowl, chop the chanterelles and cook them for 5minutes, add them in the bowl.

Put 3tbsp of balsamic and the oil in your pan, bring it to boil and add the grapes, cook them until the are lightly grilled. Put them in the bowl, add 1tbsp of balsamic vinegar, salt, pepper and your delicious salad is ready !🍇

Like every body I have a part of child inside of me and my inner child is completely mad about blondies. Unfortunately these little wonders are usually so fat and unhealthy that I didn’t ate it for ages! But now I found the perfect solution ; these blondies are healthy, light and just so delicious. These little guilty free treats will soon have a big place in your heart!

For 6 blondies you need :

1 little can chickpeas (215g)

50g light vegan butter

55g maple syrup

1 tbsp flour

1/4tsp salt

1/4tsp baking soda

1 tsp vanilla

20g vegan white chocolate ( I chose one with almonds)

20g frozen raspberries

Each blondie contains 105 calories, 2g protein, 12g carbs and 4g fat.

1)Preheat the oven at 400*F

2)In a mixer blende all the ingredients except the chocolate and the raspberries

3)Chop the chocolate and the raspberries and add it to your chickpeas dough

4)Transfer it in a small plate and put it in the oven for 30minutes

Wait 45minutes until they are cold and your delicious little blondies are ready for tasting!✨
